With Carter-Hoffmann’s Slow Cook & Hold Cabinets, you can roast to perfection with a larger yield than convection oven cooking. Our secret is gentle air circulation that caramelizes the exterior of the roast, seals in moisture & cooks more evenly. And because your roasts are perfectly and naturally browned, there’s no need to dress them up with sauces and gravies.

COMPLETELY WELDED, ALL STAINLESS STEEL CONSTRUCTION…
Double-wall with high density fiberglass insulation. Outer cabinet formed to base and welded. All seams turned in to eliminate raw edges. Heavy-duty base frame. Channel bumper on each side, with grey vinyl insert to protect cabinet.

DOORS…
Double-wall stainless steel construction. Dutch doors on CH18. Edge-mount lever handle with magnetic catch.


CONTROLS…
Full-range thermostats for cook mode and hold mode. Timer counts down in cook mode and up in hold mode.


HEATING SYSTEM…
Top-mounted convection heater lifts off for easy cleaning and service. Precision engineered interior heat ducts to provide gentle heat circulation and even heat distribution throughout the cabinet for less shrinkage and more attractive food appearance. Standard voltage is 240. NEMA 6-30 plug with 10 foot cord (two on CH6/6 and CH9/9).


PERFORMANCE…
Capable of slow cooking temperature to 325°F (149°C). Temperature variance of less than 5 degrees from top to bottom
